Aloo Gajar Matar – favorite of my House, As winters have arrived in India. Actually, I don't like winter at all because winter makes me lazy. But when it comes to food and drinks, I love Winter's because In winters, green vegetables and seasonal vegetables are available which are my favourite. Although now every vegetable is available in every season through hybrids and chemicals, but the taste is no longer the same. Today I want to share a very simple recipe with you guys in this blog which is healthy and tasty. Gajar Aloo ki Sabji/ Carrot Potato Recipe Potato carrot curry is everyone's favorite in my house.If you have green peas then you can also add peas in it which makes the dish look even better and tasty.

Ingredients 📄
• 2- 3 Carrots 🥕
• 1 Medium size Potato 🥔
• 2 Greeen chillies 🌶️
• 2 tbsp of Mustard oil🛢️
• 1 tbsp Cumin seeds.
• Salt to Taste.
• 2 Pinch of asafoetida (hing).
• 1 Tbsp of Turmeric.
• 3 Tbsp of Coriander Powder.
• 1/2 tbsp of dried Mango Powder.
• 1/2 Tbsp of Garam Masala(Optional).
• Coriander leaves ☘️ for Garnish.
Wash potatoes and carrots thoroughly with water to remove dirt and soil.
With the help of a peeler, remove the peel from the carrots and potatoes.
Now divide the potatoes and carrots into parts and cut them as shown in the photo. Also chop the green chillies.
Now take a kadhai/Pan, Heat the Mustard Oil
Add cumin seeds & Hing into and fry till it starts spluttering.
Add Turmeric and Coriander Power in Oil, Saute it continues so that your spices didn't burn.
Immediately Add the chopped Vegetables into it.
add salt as required, Mix well Upside and down. Cover the kadai with Led so that vegetable cooked in Stream at low Steam.
When half of your vegetable is cooked, add dry mango powder.
If the vegetable is fully cooked then add garam masala to it for aroma & Flavour.
Now your vegetable is ready to eat, you can garnish it with green coriander.
