Mini pizzas delicious

Hello community!

Today was my turn to cook something, so I managed to prepare some delicious vegetarian meal from the things we had at home. I'd like to share with you this recipe for some eggplant "mini pizzas", which I will serve with rice and cous cous salad.

Ingredients (4 plates):
🟢 1-2 eggplants
🟢 2 big or 3 medium eggs
🟢 100 g of any cheese
🟢 5 tbsp of tomato sauce (I used home made ketchup )
🟢 2 cups of oatmeal, bread scrubs or flour
🟢 200 ml of oil
🟢 2 cups of rice
🟢 1/2 cup of cous cous
🟢 1 tomato
🟢 1 cucumber
🟢 2 tsp of capers
🟢 1 leek
🟢 Salt, provencal herbs or orengano

Wash the eggplant and cut it for 1 cm thick slices. Put some salt on the slices to remove extra water from them. After few minutes get rid of the water using paper towel.

Prepare bowl and two plates.
In the bowl mix eggs with the salt.
Put some oatmeal or bread scrubs in one of the plates.

Each piece of the eggplant cover with the egg, then do the same with the oatmeal (both sides). Put ready eggplant pieces in the empty plate you prepared before.

Boil the water and prepare the rice. Don't forget to salt the water.
If you are making selfies, remember to not touch hot pot with your finger 😅

Wash all the vegetables. Cut tomato and cucumber into a small cubes and leek into thin slices. Mix everything in the bowl with capers.

Prepare cous cous by adding water and salt and waiting five minutes.
Until this moment your rice should be ready so remove the water from the pot and leave it to cool a bit.

Turn on the owen. Set it in low heat (180°C is more than enough)
Heat the oil in a pan and fry the eggplant for 1 minute each side.

Ready eggplant put in some heat-resistant vessel. On the top of each piece put the small spoon of tomato sauce and bit of grated cheese.
Put the eggplant in the owen for few minutes until the cheese is melted

Add cous cous to the bowl with vegetables. Mix everything, try and add more salt, if needed. Your salad is ready.

Put some oregano or provencal herbs on top of each eggplant piece.

That would be all. Meal is ready
