Afang soup is a delicious and nutritional vegetable food from the Akwacross people, I mean the Akwa Ibom people and the Cross River State people in the southern part of Nigeria. I will start by listing out the ingredients I used in cooking it.

Ingredients

✓ Goat meat
✓Fresh pepper
✓Crayfish
✓Water leaf
✓Afang (ukazi leaf)
✓Periwinkle
✓Maggi cube
✓Salt
✓Palm oil
✓Cow skin (kpomo)
✓Dry fish

step 1

I washed my meat, dryfish and kpomo, washed all very clean, then add all inside the pot, add little pounded fresh pepper, salt, maggi cube, and then added little water, and cook for 20minutes.

While the meat and other protocols was on fire I used that time to slice the waterleaf and also pound the crayfish and set aside. I had grinded the afang in the market to avoid the stress of pounding it in the house due to how hungry I was.

When the meat was soft and tender I pour in the periwinkle and the slices waterleaf into the pot, I also pour in red oil immediately that's because I want the waterleaf to still look fresh in the pot, I covered the pot and allowed it to boil for about 20minutes.

After I finished putting the three ingredients into the pot, I covered it and allow it to cook well. When it was 20minutes I open the pot and then put the other ingredients into the pot, which is the grinded Afang leaf and pounded crayfish, stir it very well.

I also pour in a little red oil into the pot, because Afang soup need more of red oil. I allowed it to steam for 3- 5 minutes amd my food was done and ready.

They are various method of cooking your Afang soup and it comes out well, so this is just my simple method of cooking mine.

N/b
When cooking Afang soup please your water leaf should be 60% while your Afang leaf should be 40%. Your afang soup does not need much water because your water leaf produces water too.
