Hi chefs. It's nice to be participating in this week's contest and preparing yet another sumptuous recipe.
I prepared ripe plantain and fried eggs for breakfast. It is rich in protein and vitamins and it nourishes the body. It is a rich source of fiber, vitamin A, B,C as well as magnesium, calcium and potassium.
This combo really makes a delicious meal and is balanced in terms of health. Here is my recipe.
Ingredients
Ripe plantains (depending on number of people and quantity to be prepared)
Eggs (I used 6 but it's optional too)
Tomatoes
Fresh peppers
Salt to taste
Onions (2 bulb)
Vegetable oil
Preparation
First, I washed and peeled the ripe plantains, then I slice then in this shape so it fries all round.
Next I sliced my tomatoes into somewhat big chunks ( I love chewing them that way, you can make yours smaller if you wish).
Then I slice my fresh peppers. Fresh peppers gives more taste than dried ones and I sliced mine to be a bit bigger so the flavour is immersed in the food.
Then I sliced my onions too in big chunks
My vegetable oil is handy as well for use later.
Next I break my eggs and whisk them, I added some fresh peppers inside the egg liquid and a pinch of salt to taste, then I whisked it vigorously until everything dissolves.
Then, I fry the plantains using the vegetable oil and make sure to turn both sides at specific moments so it doesn't get burnt.
Finally in that same oil I fry the whisked eggs.
Fried plantains and eggs are ready to be eaten.

I really enjoyed the cooking process because this is one of my best meals. The meal was so satisfying and made me long for more.🤗 I enjoyed every bite of the finished meal.

You have shared a great recipe. Your presentation and step by step description of cooking is really appreciated. This combination of ripe banana and egg is very popular and nutritious. As your recipe is made with simple ingredients anyone can make it at home.
Pictures and step-by-step preparation descriptions make the whole process much easier. Especially the use of tomatoes, onions and green chillies gives a different flavor to the dish. The tip of adding chilli while frying eggs is quite unique, it will add depth of spice to the dish.
This food of yours is not only delicious but also healthy. It's packed with vitamins, minerals and protein, which will help energize you at the start of the day. I am sure, it was great to eat.
