Hello Steemians, today I will be preparing Cocoyam and Pepper sauce. It is a traditional dish eaten in some parts of Africa. It is really simple to prepare, delicious to eat and satisfying to the body. It is a meal that can be prepared in 45 minutes or less and can be served to visitors quickly.
Cocoyam contains Vitamin-C which helps the immune system produce more white blood cells in the body. It also prevents constipation, helps with bowel movements, and boosts the gastrointestinal system to help digest foods.
I used curry leaves and scent leaves. These leaves help the food to taste well, its strong yet sweet scent will leave your kitchen smelling nice.
Ingredients and Method of Preparation
Cocoyams
Scent leaves and curry leaves
Fresh peppers
Salt to taste
Seasoning cubes
Palm Oil
Step 1 Wash the cocoyams and peel them. Boil them for about 20 minutes.
Step 2 Wash the scent leaves and curry leaves and slice them into pieces.
When the cocoyams are soft, remove them and drain the water out.
Step 3Add five spoonfuls of palm oil into the pot and leave it to steam, then fry the onions, add fresh peppers and salt to taste, add three spoons of water and allow it to fry for a minute. The major ingredient is the oil and not water. Ensure that the pot is covered when frying.
Step 4 Last, add the scent leaves and curry leaves inside and stir it. Leave it for a minute and then turn off the heat so it doesn't get overcooked.
Cocoyams and sauce are ready to be eaten.
