Ekpangkukwu is one of my local delicious recipe, full of nutritions that improve and give the body a good and balanced health. This recipe is one of the thing we African people are known for. Although it has a very time comsuming process, yet, we still love it because of the benefits.
As we know our body needs a proper care and one of the way is to eat an healthy diet, today, I brought to you an healthy recipe I include in my meal this week.
Ingredients
🌺Water yam 🌺 cocoyam 🌺fish 🌺 periwinkle 🌺 seasoning cubes 🌺Salt 🌺 Onion 🌺 Pepper 🌺 Crayfish 💮 Aromatic herb(scent
leave) 🌺Cowskin 🌺sweet potato leaves
Now that our ingredients is ready, let begin the steps;
Step1
With knife, I peel out the cocoyam and the water yam, Wash it very well to avoid been in contact with sand and I use local blender(okuok) to blend them and have a smooth fantastic mixture.
Step2
Cowskin, fish, periwinkle were properly wash and season with cubes, Onion, pepper and salt. As this was going on, I plug out the sweet potato leaves from the stem, wash and keep aside.
Step3
I set all the things ready to begin this steps. I have my tray of the blender cocoyam and water yam well sprinkle with a cube and a pitch of salt which will be mix, the wash sweet potato leaves and a pot with a little red oil in it. I will rub the oil around the pot in order not to easily get burnt.
Step4
The wrapping process begin. This will continue until the mixture finish.
Step5
When I was done, I boil hot water, recycle the heads of the fish, ribs by pounding it to have this. I pour in the hot water, sneeze it a little and drain out the water. The water is what I will use in doing the cooking.
Step6
The pot was place on the fire for 5 minutes and I added the water, leave it to cook for 30minute. Checking on the pot, it has cook very well. I use knife to make a cut all
round and add a little salt.
Step7
Next thing is to add the seasoning stock. I pour in the stock, grinded crayfish, stir thoroughly, making sure every ingredients take their respective place. Then I added oil and allow to cook.
Step8
This is the final stage. I wash the Aromatic herb, slice it and add in the meal with enough oil, stir and off the light. My local delicious Ekpangkukwu recipe is ready.

This recipe is referable at all time. Ekpangkukwu which is a nutritional meal, mostly used cocoyam and Water yam with other nutrients ingredients offers a great of carbohydrates, improve heart health, prevent anemia during gestation period, reduce cholesterol in the body and also help to lower blood sugar level.
