S16-W2 “My own contest topic"

Steem greetings fellow foodies and chefs in the house, and welcome to my blog as I share my ideas about some delicious food menus in Cameroon.

Before I go into some of the menus, I will first say Cameroon is blessed with a variety of delicacies. One can go for 30 days without repeating a meal…ooh yes, the reality is that we have over 250 ethnic groups and each of these tribes has a traditional meal. One of the reasons Cameroon is termed “Africa in miniature”, meaning everything that can be found in any African country is found in Cameroon.

That said guys, let's visit Cameroon cuisine and have a taste of some of these menus and I do hope you all enjoy it.

I will begin with breakfast. There is no particular meal taken for breakfast. However, this depends on different households. With me, I go mostly with vegetable salad and bread, potato chips and omelette, and fried ripe plantains with vegetables, noddles, etc

Breakfast Menus

I will begin with noddles. My kids love noodles for breakfast. I mostly prepare it during school days so that it can keep them till during snack time before they return back home. I usually garnish it with fresh tomatoes, carrots and green beans.

Some days when I do not like to eat something heavy especially when I have a lot of work to catch up on, I eat vegetable salad accompanied with French bread. Or better still I go with fruit salad.

Another breakfast menu commonly eaten here is potato chips and omelette. We cultivate lots of potatoes and poultry farming is highly practiced here. Most often I fry potato chips with an omelette for breakfast as it is easy and simple to go with.

These are some of the breakfast menus and I can go on and on showing the different types.

Lunch Menus.

For lunch, we have a variety of delicacies depending on the type of traditional meal you want to eat. Below I will showcase some of the few I most often prepare at home.

The first menu for lunch will be eru and fufu. The fufu is made from cassava and Eru is prepared with a combination of beef, waterleaf, crayfish, cow skin, smoked fish, palm oil, Maggie cubes and salt. If you are a lover of hot chilli, then you can try Cameroon hot chilli with good aroma and flavour.

The second menu for lunch is ekwang. This is another traditional delicacy prepared with cocoyams. The cocoyams are peeled and grated and wrapped in cocoyam leaves cooked with smoked fish, crayfish, palm oil, contri onion, etc.

The next on the list is achu and yellow soup. This meal is my traditional meal mostly eaten by the upper ngembas of the North West region of Cameroon. This is one of my favourites and trust me, this meal is very good for those who consume lots of alcohol.

Another meal for lunch is yam and okonghobong. The okonghobong is a vegetable prepared using pumpkin seeds and smoked fish with beef. This soup can also be used to eat plantains or cocoyams with.

Also on my lunch menu are coki beans and ripe plantains. Coki is a a special delicacy made from white beans. The beans are soaked in water for a while and washed out the peelings. Then blend it and mix with palm oil, and salt and garnish with cocoyam leaves, tied in plantain leaves and cooked.

Last but not least I will talk about is roasted fish with miondo. This is a traditional delicacy highly consumed in the coastal region of Cameroon. I usually prepare it once in a while for lunch. It can be eaten with miondo but can also be eaten with fried potatoes or ripe plantains.

The list of lunch menus is long and I cannot write it all. These meals can also be taken for dinner. I will end it here and I'm inviting @majerius, @josepha, @mesola, and @saxopedia to share their entries to the challenge.
