First of all i would like to congratulate all the winners. The color challenge of wednesday is green.Today am going to present bitterguord curry in the food color challenge theme green wednesday.
Bitter gourd is a rich source of vitamins and minerals. It contains iron, magnesium, potassium and vitamins like A and C. It contains twice the calcium of spinach and beta-carotene of broccoli. Various anti-oxidants and anti-inflammatory compounds are present in bitter gourd.
We can even drink the juice of bitter gourd. A tip to reduce the bitterness by adding the tamarind pulp and jaggery to it. You dont feel much bitter after adding to it.
I made a delicious bittergourd with out bitterness...Everyone liked in my home.Even my kids had it by enjoying the taste.you can even have the taste of it.i have prepared bitter gourd juice along with the curry.
In India today we are celebrating the festival Diwali,which is also know to be as festival of lights.
