Hello SIC team! I accept your invitation and will come up with a recipe that my mom used to make often. I prefer a lot of things, but I am giving you one that I can prepare myself. So here is my preparation for the Steemit Engagement Challenge S9-W2.

  
First of all, I would like to thank my mom who left this world when I was still very young, who used to make Cauliflower gnocchi. My mom, used to cook some of the best dishes available anywhere in the world and Cauliflower gnocchi were among them. Today, when I am going to give you this recipe it is bringing back the memories I spent time with her in the kitchen.

What I Prefer

I learned to cook some of them because I really loved eating them; I still do, and I congratulate myself that I learned to cook them from my mom just in time.

Here I am presenting a favorite dish Cauliflower Gnocchi from my mother's recipe book that I love to eat as much as I love others, but this vegetarian dish is easy as well as good for a complete meal.

Incidentally, I am a vegetarian now (but I was not one earlier), and cauliflower dishes like cauliflower gnocchi and cauliflower Manchurian are my favorite dishes.

While making cauliflower Manchurian is time-consuming, I make it twice or three times a month. Cauliflower gnocchi is easier to make, and I cook it often when my wife is not feeling like cooking a full meal. However, I am the one who prepares this dish better, so I am giving you my mom's recipe in my words.

Cauliflower Gnocchi

I generally prepare cauliflower gnocchi without using eggs, but my mom used to prepare them by meshing the potato, flour, and eggs and baking them in the oven. However, I mix cauliflower, boiled potatoes with gram flour, minced onion, finely cut baby spinach, and a green pepper or two cut into small pieces. My wife doesn't like garlic; otherwise, I would take a clove of garlic too.

I use spices like salt, and pepper and mix them well to form a dough. Once the dough is ready, I make small balls and then deep fry them until crisp.

That was the basic practice. Now I will take these balls and add them to an air fryer for about 10 minutes on low heat, although my mother used to cook them in an iron pan. By the time these balls get air fried, I will take a separate pan and use 2 tablespoons of olive oil, grated cheddar cheese (parmesan), and siracha sauce to mix them well.

Ready to Serve

By now, the gnocchi balls are ready. I will toss them with olive oil and sprinkle the cheddar cheese and Cajun spice over the top. I keep tossing and stirring so the balls coat evenly, and then I place the gnocchi balls back in the fryer basket. This needs another 10 minutes at a proper temperature to make it properly crispy.

Now the dish is ready to serve after mixing the sauce and mayonnaise. It takes a total of 20–25 minutes to make a top Italian-grade cauliflower dish now, but my mom used to take at least one hour with her traditional style of cooking.
