African Cusine; Afere Usuñ ikpoñ (Cocoyam soup)

Today I actually want to share with you How I prepared one of our traditional cuisine. Cocoyam which botanical name is Xanthosoma sagittifolium is a good source of potassium which makes it very good for people of all ages to eat it.

Cocoyam is one of the nutritious food that we have over here in Africa, before now people usually ignore cocoyam they don't value it but now because of it s nutritious value that is being discovered by some dietitian, coco yam is now very expensive. The prices of it even in the market has gone high but even with that people still consider it one of the richest African cuisine.

Health Benefits

Rich in potassium thus, regulating the volume of water and acid in the blood as well as the body tissues. Cocoyam is rich in carbohydrates and ofcourse from the name, it is from the yam family therefore, it is a good source of dietary fiber which helps in improve the function of the digestive system which can result in maintaining a healthy weight loss, good source of calcium and other minerals.

There are different species of cocoyam with their different recipes. So today I decided to use it to make a delicious soup many people may have their own recipe of cooking this white soup but I want to share my own recipe. The way I actually crave eating it and I prepared it that way.

Ingredients

  • Cocoyam
  • Chicken
  • Fish (both dry and fresh)
  • Perewinkle
  • Vegetable oil
  • Onion
  • Pepper
  • Azuza leaf
  • Stock fish
  • Crayfish

IMG_20241002_101320.jpgI boiled the cocoyam till soften then blended it till smooth in texture.

That's my main ingredient, actually it is used in this soup as a thickener, it also add flavour and a smooth slippery texture to the soup.

So after preparing all my ingredients and keeping them in place it was ready for the cooking step to begin.

I fried the soup to git it a nice flavour, so I added vegetable oil to the dry pot on fire and allow it to heat

I added onion to it, and the flavour was really nice and appetizing

I added stock fish, perewinkle and the chicken stock to the pot and cover the pot to simmer for 3 minutes.

I added dry fish, seasonings to taste and crayfish then allow it to simmer for about 3 minutes. At this point, I allowed it to cook before tasting to confirm the seasoning quantity is okay.


In 2 minutes time, the pot was already cooking the ingredients, I go in with the cocoyam

Cover the pot to simmer for about 3 minutes for the cocoyam to properly dissolve and make the soup thick.

I finally, added azuza leaf and the soup was ready. See the thickness and perceive the aroma

Afia efere soup is ready

So it can be eaten with any swallow of your choice either the cocoyam swallow or garri swallow or oatmeal swallow or fufu swallow corn flour swallow or starch. Any swallow of your choice.

Different people have their various way of cooking this soup but this is the way I prefer cooking my afia efere soup. This looks yummy, you remind me of the past years when my grand mum used to cook this type of soup and with the pounded cocoyam for swallow for us. I later discovered how cocoyam is very medicinal and good for the general body functions.
