Ingredients:
Chicken wings (quantity as required)
Ginger slices
A few star anise
Green onion sections
A moderate amount of cooking wine
Light soy sauce
Dark soy sauce
Sugar
Coca-Cola (non-zero degree)
White pepper powder (optional)
Instructions:
1、Prepare the Wings: Clean the chicken wings thoroughly. Make cuts on the skin side to enhance flavor absorption.
2、Boil the Wings: In a pot, add water, ginger slices, star anise, green onion sections, and a bit of cooking wine. Boil the chicken wings until they start to bubble, then take them out and wash them clean. This step helps remove any gamey taste.
3、Fry the Wings: In another pot, add a little oil and the same spices. Add the boiled chicken wings and fry them over medium heat. There's no need to fry them until they're too crispy.
4、Add Seasonings: Pour in the light soy sauce, dark soy sauce, sugar, and Coca-Cola. Add the Coca-Cola in two batches to prevent it from overflowing.
5、Simmer: Continue to cook the chicken wings over medium heat until the sauce thickens, occasionally turning the wings to prevent sticking and burning.
6、Reduce the Sauce: Keep cooking until the sauce is nearly dry, leaving a thin layer on the wings.
7、Plating: Stack the wings on a large plate. You can sprinkle a little white pepper powder as per your taste.
Tips:
Add the spices after pouring in the Coca-Cola for better flavor adjustment.
Add the dark soy sauce in batches to prevent the color from becoming too dark.
Serving Suggestion:
If you prefer to mix the sauce with rice, leave more sauce.
Otherwise, you can reduce the sauce more for a drier finish.
