This is my submission for the second term of the #globalcuisine s23w2 basic course taught by @suboohi.

Although I didn't get to attend the first lesson, I am very happy to learn very well and thanks to teacher @suboohi for that. And I hope to do this homework to the best of my ability. As we all know, Afghan cuisine is a great mix between Central Asian and South Asian cuisine. These dishes are mainly based on fresh ingredients and spices.


Then let's start..


01. What is new for you about the course, any spices or cooking techniques or anything you would like to share?


New to me, I have never tried Afghan cuisine in my kitchen before. Never tried afghan cuisine in a restaurant.This is my first time.So I learned this recipe from the course.

I had actually seen photos of afghan polaw before, so I thought this was a type of biryani. The best thing about this for me is that it is very tasty for my two little ones who don't like spicy taste and I can prepare it quickly. The sweet taste here makes them more hungry.

It was really difficult to find beef in the village where I live and for that I have to go to the town which is a little far away. But due to personal reasons it will be late and I will not be able to participate in this so I thought of using chicken.
Also, rice mixed with raisins, caramelized carrots, and meat really gave it a whole new flavor. In fact, because of that, a unique flavor has been added to it. I think we should not add ginger garlic or other spices to this otherwise the traditional taste of afghan cuisine may be lost.


2. Does your local cousin have any food that resembles the shared recipe?


Yes, indeed I could see some similarities with srilankan dishes in some of the afghan dishes named here. Especially the polaw that you shared with us today, I find it very similar to my country's rice mixed with chicken.

Srilankan food also has dishes that combine sweet and salty flavors, which is quite characteristic and is usually mixed with yellow rice that is made on special occasions in our country.


3).Prepare the Afghan polaw following the recipe provided in the course or the one you prefer. Include your label with your name and the date in the final presentation of the recipe.


INGREDIENTS

  • Chicken 200g
  • Rice 1 cup
  • Onions 2,
  • Salt1 tbl 1
  • Cumin seeds 1/2 tsp
  • Oil 3 tbl
  • Carrots 1
  • Black raisins 3 tbsp
  • Sugar 2 tsp
  • Water

METHOD

🌿First, put 3 table spoons of oil and when it heats up well, we put the onion slices in it and let it fry for a few minutes until it becomes transparent. Then we add the previously washed meat and cut it into small pieces and we cook them together until they turn golden.


🌿 Then we add salt and cumin seeds and fry for 1 to 2 minutes. Then add water and cook very well until the meat is steamed well or until it becomes soft.
We wash the rice several times and soak it for a few hours to ensure its texture.

🌿 Also, before using the raisins, wash them and soak them in water. Then cut the carrots into strips, caramelize oil and sugar in another pan, add the carrots and raisins and fry for a few minutes. Then remove from the heat and leave to use in our dish at the end.

🌿 When our meat is soft, we remove the pieces of meat and add the already soaked rice to the gravy and cook it on medium heat for 10 to 15 minutes. Then we add caramelized carrots with raisins on top of the rice. Then mix it and cook the rice on low heat for few minutes.

It was really delicious. My two kids ate it very much and it was a new experience for all of us.

Actually, this afghan cuisine is not a food that costs a lot of money. It is very easy because it uses minimum amount of ingredients.

Just like you, I've never made Afghan cuisine either. However this course has given us a very valuable lesson and now we have made this delicious dish in our own home kitchen

You use chicken meat and that's very appropriate in my opinion, especially to keep the costs down.
