How are all the Chef friends of the Steemit Iron Chef community? I hope that by the grace of God, all the Chef friends are well. In the Steemit Iron Chef community, @mvchacin mam has organized a Contest: Recipe of the Day. Week No.49 of the competition. Today I have come to share my entry in the competition. In this week's competition, I will share two pitha recipes of traditional winter bhapa puli, and dudhpuli. Now the winter is almost over. The country of pitha puli is Bangladesh. Pitha is a part of our national heritage. When winter arrives, everyone thinks of winter pitha. Bengal's winter is not complete without pitha. The winter pitha festival is not only the joy of food, it brings a stream of joy among us, strengthens cultural bonds with each other, and introduces the new generation to tradition. Let's go to the pitha recipe without delay, friends.
First, I will share the recipe for making steamed puli pitha. All the ingredients required for making pitha:
Rice powder 2 cups
Coconut pulp 1 cup
Date jaggery 2 cup
Liquid milk 4 cup
Almonds 1 tsp
Raisins 1tsp
Step 1
√ I put a pan on the stove to make the pitha filling. I will make two types of pitha with the same filling, so I added a little more coconut pulp and date jaggery to the pan. I grated the date jaggery into small pieces so that it melts quickly. Then I added a cup of milk. Now I will mix all the ingredients by stirring.
Step 2
√ Keep the stove on low heat and stir continuously. When the date jaggery melts, some water will come out and I have used liquid milk, so I will keep the stove on medium heat and cook till the end. I made the pitha filling by stirring continuously until the milk in the filling dries up. I spread it out so that the pitha filling could cool down.
Step 3
√ I will make the dough for the pitha with rice flour, so I put a pan on the stove. I put 2 cups of water in the pan to heat it. I put 1 teaspoon of salt in the water. When the water boils, I put 2 cups of rice flour in the water. Then I will mix the rice flour with the water well by stirring it with a spoon.
Step 4
√ I spread the flour in a large bowl to cool down. When the flour has cooled down a bit, knead it well with clean hands and make a dough. It will take some time to make the dough, so a soft dough will be made.
Step 5
√ Now I will make a large loaf of bread from the dough. While making the bread, you should take care that the bread does not become too thin or too thick. When the roti is ready, I will cut many small rotis from one roti with a cookie cutter. Similarly, I will make small rotis from the remaining dough.

√ I put a teaspoon of the pitha filling prepared for pitha on the small rotis. Then I will press it well with my hands and close the mouth of the pitha. The mouth of the pitha must be closed well so that the pitha does not open and spread during cooking.
Step 7
√ I designed the pitha very beautifully with the help of a cut spoon. I made all the pitha in the same way. Then I divided the pitha I made into two parts. I will cook one part in steam and make vapapuli and the other part will be soaked in a mixture of milk and date molasses to make dudhpuli.
Step 8
When all the pitha are made, I will put water in a pot on the stove. When the water boils, I put a steamer on the pot. I arranged all the pitha on the steamer. While arranging the pitha, make sure that there is a little space between the pitha. Then close the lid of the pot for fifteen minutes and steam it.
Step 9
After 15 minutes, I removed the lid from the pot. Then I checked whether the steamed puli pitha were cooked properly. My steamed puli pitha were cooked very nicely. Now I took the steamer off the stove. When it cooled down a bit, I served the hot steamed puli pitha in a bowl.

Now I will share how I made dudhpuli pitha.
Step 10
I will prepare milk for dudhpuli pitha. For this, I took 4 cups of liquid milk in a pan. For a nice flavor, I added 3-4 cardamoms to the milk. I will keep the stove on medium heat and stir continuously to heat the milk.
Step 11
When the milk is hot, add the grated date molasses. Stir the molasses well and mix it with the milk. When the molasses melts, drop the pithas prepared in advance into the hot milk.
Step 12
After dropping the pithas into the milk, stir them lightly and mix them with the milk. Cook for ten minutes, stirring occasionally. When the pithas become light and float on top of the milk, you will know that the dudhpuli pitha is ready. Now turn off the heat. Eating hot dudhpuli tastes different, eating dudhpuli when cold is even more amazing. The milk in dudhpuli tastes like malai.
