Athirasam is a traditional sweet made in South India especially Tamil Nadu which is commonly made and shared in special occasions and Tamils celebrate festivals.
INGREDIENTS
💚 Rice 💚 Cardamon 💚Oil 💚 Sesame Seeds 💚 Jaggery 💚
Step1 :
Take 500 gm rice and soak it in water for up to 2 hours. After that, drain the water and spread it on a mat to dry. Then, pour the soaked and dry rice into the mixer grinder and grind it to form flour.
Step2 :
To make jaggey surup, heat a pan and add 500 grams of crushed jaggery and a litre of water. Mix thoroughly while boiling.
Step 3 :
Take a broad pan. Add the ground rice flour and gently pour the syrup while mixing thoroughly with a wisk or spoon to produce dough. Keep the dough in refreigirator up to 2 hours or cover with cotton and cloth and keep aside for a overnight to set.
Step 4 :
Remove the dough from fridge and keep it open on a plate to become room temprature. Take a dollop of dough on your palm and create a round, flat, hollow pieace like a donut using pan leaf or banana leaf.
Step 5 :
Put a pan on the stove or flame and pour oil to heat. Once the oil is hot, turn the temperature down and add the dough pieces one by one to the hot oil to fry.
Step 6 :
When the pieces fried well and turn golden brown take them out abd keep them in a container, and shower some ghee fried sesame seeds on them.
Now the sweet and soft Athirasam is ready to eat; store it in a container for daily snacks up to 7 days.
