My Favorite Ingredient

What is your favorite ingredient? What makes it different from others.

Among non-vegetarian foods, fish dishes are known for their aroma and taste. It goes without saying that the smell of the fish broth will pierce your nose while it is cooking. Even children can easily tell what is cooking at home by the smell of fish cooking. So much so that the smell of cooking fish can be smelled all over the street.
Fish is healthier than chicken and mutton. Fish contains all the nutrients required by the body. Children have fish at an early age. Get used to it. It is very good for the body if fish is eaten in gravy rather than optional.

On the other hand, it is also a healthy food as it contains protein and medicinal properties that are not found in any other food. Fish is one of the favorite foods of all ages, from young children to the elderly.

Is this ingredient often used in your home?

Everyone in our family is addicted to my mother's fish curry. Whoever comes from the town, calls my mother on her cell phone in the morning and tells Anbu that we are coming today and we want fish gravy. After coming and eating, they would pick up the leftover gravy and take it with them, saying that it would be good to touch it with the dinner idli. Knowing their mind, my mother would also add tamarind to the fish broth without adding coconut to make it delicious.

Around our town there are many lakes, ponds and many water bodies like Kosasthalai river. In short, there is no shortage of fish. Local fish varieties are especially available here.

Ingadients:

❤1-kg fish ❤oil required amount ❤7 small onions ❤7 cloves of garlic ❤1 teaspoon cumin ❤1 teaspoon anise ❤¾ teaspoon pepper ❤1½ table spoon chili powder ❤2½ pepper ❤1½ spoon coriander ❤1 tomato ❤¼ cup grated coconut ❤tamarind Amount of lemon ❤Salt as required

Seasoning: ❤Ghee required ❤1 tsp mustard seeds ❤½ tsp fenugreek seeds ❤12 small onions chopped ❤a pinch of fenugreek ❤1½ tsp ginger garlic paste ❤2 green chilies chopped ❤¼ tsp turmeric powder ❤1 tsp Kasmiri chili powder
Step 1:

Wash and clean the fish pieces with water.

Step 2:

First put a pan in the oven and pour oil and when it gets dry, add onion and garlic and fry half of it, then add cumin, aniseed and pepper.

Step 3:

Once fried, add chilli powder, coriander powder and fry on medium flame. Then add tomatoes and curry leaves and saute.

Step 4:

Then add grated coconut and fry for a while, then take it out and let it cool.

Step 5:

After it cools down, add it to the mixer and grind it. ▢ Add the ground to the pan and add tamarind juice to it and keep it dissolved by adding required amount of salt.

Step 6:

Then add ghee in a pan, add mustard, chopped onions and curry leaves and saute until onions turn golden brown.

Step 7:

When the onions are fried, add ginger garlic paste, green chillies and when the ginger and garlic smell green, add turmeric powder, Kasmiri chilli powder and fry it on medium flame. Add the dissolved masala water and add required amount of water and cover and let it boil for 10 minutes.

Step 8:

After boiling for 10 minutes, add the fish pieces and add mango pieces if needed. Cover and cook on medium heat for 5 minutes. Finally, add small onions, red curry paste and saute.

Step 9:

Now the delicious village milled fish curry is ready.
