In my country Sri Lanka, it is hard to find a special ceremony without cooked Brinjol in it's menu. Normally there are two ways we cook Brinjol in here. One way is with using coconut milk and the other way is called "Brinjol Moju". Let me tell you about the "Brinjol Moju" made by me today.
This delicious dish is made by adding coconut milk, salt, sugar, chill flakes, spices and turmeric powder to the fried Brinjol and Onion slices and I also strongly believe that a menu in a party is incomplete without this curry.
If coconut milk wasn't added, this curry can be preserved for 3 or 4 days without keeping it in a refrigerator.
Thanks to this curry, my lunch and dinner were special like a meal of a party.
