Ukrainian Cabbage Rolls or Golubtsi is a very popular dish in Ukrainian cuisine. No traditional wedding, Christmas or Easter holiday is complete without them. Festive stuffed cabbage rolls are prepared with meat and rice, and on Holy Eve, stuffed cabbage rolls are prepared with mushrooms.
You can also make golubtsi from different types of leaves: cabbage, grapes or even beets. There are also a large number of fillings for them - millet, buckwheat, potatoes, mushrooms or their combinations. However, the classic and most popular cabbage rolls are prepared with meat and rice.
To prepare cabbage rolls, I need the following ingredients:
- cabbage;
- minced pork;
- rice;
- onion;
- carrots;
- salt;
- pepper;
- sunflower oil.
I remove the top leaves from the cabbage and cut out the head. Then I boil it in boiling water so that the leaves are steamed and fall behind each other. I periodically twist the cabbage in the water so that the water gets between the leaves. When the head of cabbage has boiled for a few minutes, I gradually remove the leaves and put them in one pile. On cabbage leaves, I cut off part of the cartilage, where the vein on the leaf is thicker.
Now I need to prepare the filling. To do this, I pour a glass of rice with hot water and leave it to steam and swell a little. Next, I finely chop the onion and stew it over low heat so that it is soft.
To get the stuffing for cabbage rolls, I add fried onions and steamed rice to the minced meat. I add salt and pepper.
When the minced meat and cabbage leaves are ready, I start rolling the cabbage rolls. I divide large cabbage leaves into two parts. I take a spoonful of minced meat and put it on a leaf and create a cylindrical cabbage roll. Smaller leaves can no longer be divided. I put the cabbage rolls in the pan tightly next to each other. First, I put the cabbage leaves that I didn't use for cabbage rolls on the bottom. This is done so that they do not stick to the bottom and burn.
Pour water over the cabbage rolls so that they are covered. We put them to boil, covering the pot with a lid. Cabbage should be cooked over low heat for one hour.
Cabbage rolls can be served with various sauces. I prefer mushroom or creamy tomato sauce. For today's dish, I chose mushroom gravy.
