Hi, dear SIC fellows!

Today I'm happy to join the New Weekly Dynamic in the Steemit Iron Chef Community with this delicious and healthy whole meal salad we had for late lunch. Today is #sicsalad & #sicsoup and my dear partner Sanuri is in charge.

We had this healthy salad today for a late lunch. It had romaine lettuce, spinach, baby red lentils, avocado, kalamatas, strips of tenderloin, grilled cheese, and a dressing with shredded zucchini and yogurt.

My husband loves salads, and he likes to eat them in a big bowl. I indulge him.

I have these big bowls that I use for soup on a good day and for salads.

As you can see, most of the dish looks green and purple. I think it's important that our meals look neat and pretty. Why? Well, because pretty is better than ugly, right? Even the simplest meals can be pleasing to our eyes, and make us have a good time.

Let me tell you about the dressing. I used leftover yogurt and herbs dip from yesterday's breakfast (My yesterday SIC breakfast) and added more yogurt and grated zucchini.

I wash the zucchini well and grate the whole zucchini, including skin and seeds. Then I squeeze it a little to remove excess water.

At home we love dressing in abundance, so I prepare healthy dressings, free of saturated fats and low in sodium. Grated and squeezed zucchini is a great option to bulk up your salad dressing if you are a dressing lover like me.

Hola, @alicargofer. Sí, este aderezo cae muy bien incluso para las ensaladas cocidas. Sabrás que el calabacín rallado y exprimido es untable si le pones un poquito de aceite de oliva. Así evitamos las grasas dañinas -bueno, una vez más que otra XD Gracias por tu linda visita :)
