Hello everyone! A #whitesunday to you all. Im here again to present to you another local food here in the Philippines. This is called Palitaw.
It came from the word litaw meaning show, rise or float. It is because when they flatten this rice cake and put in a pot of boiling it goes to the bottom. You know it is cooked when it shows itself rising and floats on top of the boiling water.
Traditionally, this is made with malagkit/glutenous rice coated with freshly grated or dessicated coconut then topped with toasted sesame seeds and brown sugar on a banana leaf. Another variation of the toppings are white sugar, ground cinnamon, cheese and some use black sesame seeds.
Nowadays this is leveled up. Instead of being flat, it is now made in to a ball and added fillings in it. Fillings like yema, cheese or ube. I felt like it became a Filipino version of mochi. 😅 Still good with those fillings. Personally love the ube filling.
