"Recipe of the Day, Week No. 47: (shrimp squid stir-fried Aceh)"

Hi fellow chefs, how are you? Nice to greet you all, let me share a delicious recipe this time, a typical recipe from my region, Aceh.

By the way, do you all like shrimp? Of course you do. Because the taste of the meat is very delicious and tender. This time I want to share a recipe for stir-fried shrimp and squid from Aceh. Well, this recipe is a traditional dish taught by my family. This food is perfect as a lunch menu with warm white rice, stir-fried kale and also fresh ice.

Yup, let's see what ingredients I use to cook this easy recipe.

Ingredients:
  • 300 gr shrimp
  • 100 gr squid
  • 100 gr coconut milk
  • 150 gr potatoes
  • 5 red chilies
  • cayenne pepper
  • turmeric
  • garlic
  • coriander
  • candlenut
  • sunti acid
Ingredients for sautéing:
  • curry leaves
  • bay leaves
  • star anise
  • cardamom

cooking steps:
  • clean the shrimp and squid until clean. Add salt and lime juice to remove the fishy smell and also the meaty taste is more pronounced.

  • cut the potatoes into several pieces so that they are easier to soften. Can be cut into cubes, thin tips or according to the desired shape.

  • put all the ingredients that I mentioned above in a blender until smooth.

  • sauté bay leaves, curry leaves, cardamom and star anise, stir until it produces a fragrant spice aroma, then add the spices and stir well.

  • put the shrimp and squid in the pan along with the potatoes and coconut milk.

  • stir evenly, you need to cook it for 10 minutes more so that the shrimp and potatoes are tender and the sauce reduces.

  • taste correction, you can add a little flavoring according to taste.

  • the dish is ready to be served on the dining table.

I like Acehnese stir-fry because its characteristics are sunti acid and coconut milk which make the dish more savory and delicious. This food is all made from natural and healthy ingredients. In its content there are several proteins, minerals and omega 3, as well as vitamins that are good for our health.
