Are you tired of eating rice with stew always and would like to enjoy your grain with other healthier options? This recipe is for YOU!

Today, I am making a vegan recipe you should try. No tomatoes required!

It is called Carrot Rice.

INGREDIENTS YOU NEED

  • 1 cup of rice
  • 1 carrot
  • 8 tbsps of vegetable oil
  • Salt
  • Seasoning cubes (to taste)
  • Curry
  • Pepper
  • Onions

HOW TO COOK THIS MEAL

Part I: Boiling the rice

Step 1: Start by washing, scrapping, and grating or blending your carrot. I grated mine using a grater.

Step 2: Add 4 tablespoons of oil. Heat up it up before putting in your seasoning and some pepper. Once you are done, leave it to fry for 3-5 minutes to release its flavour.

Step 3: Turn in your washed rice.

Step 4: Add 3 cups of water. Some times, I use coconut milk (frequently because of its savoury taste), chicken stock or vegetable broth in place of water. These are optional.

Step 5: Cover your pot with a lid and leave it to cook until it is 85% done.

Part II: Mixing the rice and carrots

Step 6: Get an empty pot. Then add another 4 tbsp of oil.
Step 7: Mix in your blended pepper and onions. Leave these to fry for one minute.
Step 8: Add your grated carrot, curry and seasoning at this point. Then leave them to fry on medium heat for 3-5 minutes.
Step 9: Pour in your rice. Your food is ready in 5 minutes.

Additional tips

  • Carrot rice can be eaten as a side dish or light main meal (preferably lunch).
  • You can add more spices to make it spicy.
  • Use any protein of your choice if you are not vegan, whether it's shrimp, fish, meat or gizzards.
  • Olive oil is considered superior to other vegetable oils.
  • Yes, you can serve your carrot rice with anything and everything! I used cucumber. But if you pair it with banana or avocado, you'd feel so heavenly.

This should be your go-to food if you need something that is yummy and easy to prepare for lunch.

PS I apologise for the absence of the image for step 9. My phone tumbled to the ground at that moment and would not turn on until some minutes later.
