Ingredients:
4 chicken breasts
2 tablespoons of olive oil
Salt and pepper
1/4 cup of flour
1/4 cup of butter
1 onion, chopped
2 garlic cloves, minced
2 cups of chicken broth
1 tablespoon of Worcestershire sauce
1 tablespoon of tomato paste
1 teaspoon of dried thyme
1 bay leaf
1/4 cup of heavy cream
Instructions:
Preheat the oven to 375°F (190°C).
Season the chicken breasts with salt and pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 6-7 minutes on each side or until golden brown. Once done, transfer the chicken to a plate and set it aside.
Reduce the heat to medium and melt the butter in the same skillet.
Add the chopped onion and minced garlic and cook for 2-3 minutes until the onions are translucent.
Sprinkle the flour over the onions and stir until the flour is fully incorporated.
Slowly pour in the chicken broth, stirring constantly until the mixture is smooth.
Add the Worcestershire sauce, tomato paste, dried thyme, and bay leaf, and stir until combined.
Bring the mixture to a simmer and cook for 5-7 minutes or until the gravy thickens.
Return the chicken breasts to the skillet, spooning the gravy over the top.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
Remove the skillet from the oven and transfer the chicken breasts to a serving platter.
Add the heavy cream to the gravy and stir until fully incorporated.
Discard the bay leaf and spoon the gravy over the chicken breasts.
Serve the chicken with your choice of sides.
