What is green tea?
Those new to tea are surprised to learn that green tea and black tea originate from the same exact plant species—Camellia sinensis.
It is ultimately the variety of the tea plant and how the tea leaves are processed that defines how green tea becomes "green" and black tea becomes "black".

Camellia sinensis are the two major varieties of the tea plant from which the tea we drink is produced.
(1)Camellia sinensis sinensis:
It is a small-leaf variety from China that is commonly used to make green and white teas. It developed as a shrub growing in sunny areas with dry, cool climates. It has a high tolerance to cold and thrives in hilly areas.
(2)Camellia Sinensis Assam:
It is a large leaf variety that was first discovered in the Assam district of India and is commonly used for the production of strong black tea. Its leaves are larger in hot, humid climates and it is very fertile in subtropical forests.
Green tea processing
For green tea, tea leaves are harvested from the Camellia sinensis plant and then quickly heated – by pan firing or steaming – and dried to prevent too much oxidation that would brown the green leaves and Will replace their freshly picked taste.
A brewed green tea is usually green, yellow or light brown in color, and its flavor profile can range from grass-like and toasted (pan fire) to vegetable, sweet and seaweed (steamed). If brewed correctly, most green teas should be light in color and only slightly astringent.
In contrast, black tea leaves are harvested and allowed to oxidize completely before being heat-processed and dried. During oxidation, oxygen interacts with the cell walls of the tea plant, turning the leaves from the dark brown to black color for which black tea is famous, and significantly altering their flavor profile.
Steaming / Roasting → Cooling → First Rolling → First Drying (110 °C / 70 °C) → Final Rolling → Final Drying (120 °C / 80 °C)
Our green tea goes through a steaming treatment before being rolled. Steam applies light heat to the leaves to help stop the oxidation process before the leaves begin to roll into shape. Steaming also helps to highlight the leaf's fresh, grassy flavor. Green tea leaves are not allowed to oxidize after rolling, which is why they remain lighter in color and flavor.
Origin of green tea
While all green tea originates from the same plant species, different types of green tea are grown and grown around the world today, including China, Japan, India, Sri Lanka, Taiwan, Bangladesh, New Zealand, Hawaii and even South Carolina. is produced.
However, the origin of green tea is believed to be in China. It is said that even today in China the word "tea" refers only to green tea, not to the general category of tea as in the West. The Yunnan province of China is considered the native home of the Camellia sinensis plant species. In fact, 260 of the world's 380+ varieties of tea can be found in Yunnan.

Types of green tea
As you've noticed, if you've had several different types of green tea, not all green tea tastes the same, even if it all comes from the same plant variety.
It depends not only on the processing method used by the tea growers, but also on the cultivation practices used by the tea growers. At what time of year is tea harvested? How is the plant cut?
