Homemade chicken broth is delicious, nutritious and super easy to do. Stocks make the dish tasty and unique. With the seasonal vegetables available in the region, I created my chicken broth from the scratch. It’s a natural and delicious medicine that cures illnesses and strengthens the immune system.
Ingredients:
Chicken with bones
Carrot
Ginger, crushed
Onion, quartered
Garlic, unpeeled and crushed
Peppercorn
Bay leaves
Celery, bashed
Lemon grass, bashed
Ginger, bashed
Salt
Water, 13-16 cups or more
Preparation:
Remove fat from the chicken and place it in a large pot.
Add the vegetables and herbs.
Then add the water and bring to a gentle boil, Remove any scum with a skimmer and simmer for 1 hour.
You can add some more water if necessary, So the meats are always covered with water.
Let it cool and strain the liquid from the strainer, transfer the stock in a clean container and it’s ready for use.
Tips
Bashed the garlic, ginger, celery and lemon grass to release more flavor.
Press the bones and vegetables from the strainer to extract more juice.
Pull or shred the meat of the carcass and you could add to a sandwich, soup or salad.
I harvested a few leaves from my home grown lemongrass and onion leaves.
