Its summers now. My marriage anniversary is in three days. I wanted to spend time with him on the occasion. Looks like someone up there really really heard me. We are going to spend the entire 24 hours in our house locked-up. Lol. When I asked Sajan what he wanted to eat and as usual the response was “anything”! I simply lost it. Its tiresome to jog my imagination and come up with something nice!
Secretly I don’t mind it 😉 I have now become decent with almost 5-6 different kinds of cuisine thanks to our desire for experimentation. Welcome to another episode of Njeez recipe! What happens when you are looking for taste and health in the same dish. We look at a dish that can deliver carbs, vitamins and proteins.
All in one nutrition and super tasty at the same time. It’s very important to me that my cooking is liked by those who eat the food. So even though I haggle about health I focus a lot of taste as well. So, I decided to make a Daliya hotpot. For those not familiar with the phrase Daliya is called Bulgur or broken wheat in English. Dalia is a good source of dietary fiber because it has the wheat bran intact and is rich in proteins, iron and vitamin B6.
So, let’s get to it. Here are the ingredients. **Do note one can add scrambled eggs and meat as well if that is their diet. **
Ingredients
1.5 Cups Daliya
4 tbsp Cooking Oil/ Ghee (clarified butter)
½ cup carrot finely chopped
½ cup beans finely chopped
1 large potato chopped and microwave cooked for 2 mins.
1 largish onion chopped
¾ cup frozen peas
10 Cashew Nuts. One can also use Peanuts. Break them into two halves.
100 grams cottage cheese chopped into small pieces - OPTIONAL
Grated coconut - Optional
Salt to taste
Red Chilli Powder/Pepper – Optional
Green Chillies – Optional
Curry Leaves
Turmeric Powder – Optional
Cumin Seeds.
The Recipe
Heat pan on HIGH FLAME with 2 tbsp of Oil/Ghee.
Add cumin seeds and wait till they start turning brown
Add the green chilli and curry leaves.
Add cashew nuts / peanuts and fry till they are brown.
Add the onions and fry till they are golden brown.
Add the all veggies one by one. Carrot first after 30 secs add the rest.
Add the red chilli/ pepper and turmeric powder.
Add salt to taste.
Cook the veggies on medium flame till they turn soft. Do not overcook.
Add the cottage cheese. Cook for 2 mins.
Set the mixture aside.
Fry the Daliya in a large pan on low flame with 2 tsp of oil/ghee. Fry until brown.
Add 3 cups of water. You may need to adjust it depending on the quality of daliya. Water should be used carefully so that it does not become too wet and sticky.
Cover the pot for a few mins till the daliya cooks.
Add the vegetable mixture to the daliya. Mix well.
Garnish with Dry fruits/Grated coconut.And Voila! Your Daliya Hotpot is ready.
