CROQUETTES AUX CREVETTES GRISES (GREY SHRIMP CROQUETTES)
The specialty Belgian dish known as "grey shrimp croquettes" is composed of croquettes made from the tiniest shrimps that can be found in the North Sea.
Butter, milk, gelatin, all-purpose flour, onions, bay leaves, nutmeg, parmesan cheese, egg yolks, cayenne pepper, lemon juice, salt, and ground black pepper are additional essential ingredients for the dish. Parsley will be added as the final garnish right before serving.
Before they are fried and served, the croquettes are chilled for at least a day and ideally a few days. Finding the freshest ingredients is essential to creating delicious croquettes aux crevettes grises.
EEL IN THE GREEN
Paling in 't groen, also known as eel in the green, is a traditional Flemish dish made with freshwater eel and served with a distinctive green herb sauce. It is typically made at home with ingredients that are sourced locally, including shallots, cornflour, butter, salt, and finely chopped fresh herbs, including basil, sage, mint, oregano, sorrel, chervil, thyme, parsley, and stinging nettle.
The dish is finished when the eels' white flesh almost separates from the bone after being stewed. Spinach can be used to intensify the green color, and beer, wine, lemon juice, and egg yolk can occasionally be added to enhance the flavor. Fries and bread are typically served with eel in the green.
