Recipe for Plokkfiskur, a traditional Icelandic fish stew:

Ingredients:

  • 500g pollock, haddock, cod dock or any other white fish
  • 500g potatoes
  • 1 large yellow onion (or 2 small, or 3 even smaller)
  • 50g butter
  • 3 tbs all-purpose flour
  • 750ml milk
  • Salt and pepper to taste

Instructions:

  • Boil the potatoes in salted water until tender.
  • While the potatoes are cooking, melt the butter in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the flour to the onion and cook for 1 minute, stirring constantly.
  • Gradually whisk in the milk until the sauce is smooth. Season with salt and pepper to taste.
  • Flake the fish into the sauce.
  • When the potatoes are cooked, drain them and mash them. Add them to the sauce and stir to combine.
  • Serve hot.
