Recipe for Plokkfiskur, a traditional Icelandic fish stew:
Ingredients:
- 500g pollock, haddock, cod dock or any other white fish
- 500g potatoes
- 1 large yellow onion (or 2 small, or 3 even smaller)
- 50g butter
- 3 tbs all-purpose flour
- 750ml milk
- Salt and pepper to taste
Instructions:
- Boil the potatoes in salted water until tender.
- While the potatoes are cooking, melt the butter in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the flour to the onion and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk until the sauce is smooth. Season with salt and pepper to taste.
- Flake the fish into the sauce.
- When the potatoes are cooked, drain them and mash them. Add them to the sauce and stir to combine.
- Serve hot.

- Use a white fish that is mild in flavor, such as cod, haddock, or pollock.
- Don't overcook the fish, or it will become dry and flaky.
- If you don't have milk, you can use half-and-half or heavy cream.
