Ingredients:
1 pound boneless, skinless chicken or lamb, cut into 1-inch cubes
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
1 cup basmati rice
1/2 cup raisins
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon turmeric
1/4 teaspoon salt
1/4 cup chopped cilantro
Instructions:
-Heat the olive oil in a large pot over medium heat. Add the chicken or lamb and cook until browned on all sides.
-Add the onion and carrots and cook until softened.
-Add the rice, raisins, cumin, coriander, turmeric, and salt. Stir to coat the ingredients in the spices.
-Add 2 cups of water and bring to a boil.
-Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.
-Garnish with cilantro and serve hot.
