  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric

  • 1/4 teaspoon black pepper

  • 2 cups basmati rice
  • 3 cups chicken broth
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/4 cup chopped cilantro

Instructions:

  • Combine the chicken, onion, garlic, ginger, cumin, turmeric, cardamom, cinnamon, black pepper, and salt in a large mixing bowl. Coat the chicken with the mixture.
  • Refrigerate for at least 30 minutes, or up to overnight, after wrapping the bowl in plastic wrap.
  • Heat 1 tablespoon olive oil in a large pot over medium heat. Cook until the chicken is browned on all sides.
  • Pour in the rice, chicken broth, carrots, and celery. Bring to a boil, then reduce to a low heat and cook for 20 minutes, or until the rice is tender.
  • Serve with the cilantro on top.
