Char Kway Teow is a popular Malaysian and Singaporean dish of stir-fried flat rice noodles, eggs, shrimp, Chinese sausage, bean sprouts, and chives. It is typically cooked in a wok over high heat, which helps to create a crispy texture for the noodles. The dish is often garnished with fried shallots and lime wedges.

Ingredients:

  • 1 pound fresh flat rice noodles (thin or wide)
  • 2 tablespoons vegetable oil
  • 10 shrimp, shelled and deveined
  • 2 cloves garlic, minced
  • 1 Chinese sausage, sliced thinly
  • 1/2 cup bean sprouts
  • 2 eggs, beaten
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 cup chopped Chinese chives
  • 1 tablespoon chopped fried shallots

Instructions:

  • Cook the rice noodles according to the package directions. Drain and set aside.
  • Heat the vegetable oil in a wok or large skillet over high heat. Add the shrimp and cook for 1-2 minutes, or until pink and - cooked through. Remove from the wok and set aside.
  • Add the garlic and Chinese sausage to the wok and cook for 30 seconds, or until fragrant.
  • Add the bean sprouts and cook for 1 minute, or until wilted.
  • Push the ingredients to the side of the wok and add the eggs. Scramble the eggs until cooked through.
  • Add the cooked rice noodles to the wok and stir-fry for 1-2 minutes, or until heated through.
  • Add the soy sauces, oyster sauce, sugar, salt, and white pepper to the wok and stir to combine.
  • Add the shrimp, Chinese sausage, and bean sprouts back to the wok and stir-fry until heated through.
  • Remove from the heat and garnish with Chinese chives and fried shallots. Serve immediately.

Tips:

  • For a spicier dish, add 1 teaspoon of chili flakes to the wok with the garlic and Chinese sausage.
  • If you don't have fresh rice noodles, you can use dried rice noodles. Just be sure to soak them in warm water for 30 minutes before cooking.
  • If you don't have a wok, you can use a large skillet. Just be sure to use a high heat so that the noodles cook evenly.
  • Serve Char Kway Teow with a side of your favorite dipping sauce, such as sweet chili sauce or soy sauce.
