The recipe of what I cooked today is called MTN rice or Red oil rice. This is a very popular food in my country Nigeria, and it is common food , what I mean is that it is very simple to cook and easy to lay hands on.
Before I proceed with the method of preparation, I will list out the items/recipe I used in cooking it.

Method of preparation

I put the raw into the pot, put water in the quantity I wanted then I parboiled it for about 10 -15minutes. Then I removed it from the fire and pour into the sifter to wash it.

I put the empty pot on fire, then pour in the quantity of red oil that I want into the pot to heat, before then I have already pound the crayfish and also sliced the pumpkin leaves and onions and set aside while the rice was on fire.

The red oil has heated for another 2 minutes then I pour in the sliced onions into the oil and fried it.

After frying the onions for 40seconds, then I added other ingredients, ranging from the pounded crayfish, Maggi, salt and pepper, stir it all together and allow it steam for about 2 minutes.

After the 2 minutes, and then pour in the parboiled rice into the pot and add little amount of water, stir it well and taste for salt.

After stiring it wel, I washed the raw egg well and insert it into the bottom part of the pot of rice, so that it will cooked well, then I covered the pot so that it will cook very fast.

I allowed the rice to boil for about 20 -25 minutes, by then the water was drying off gradually, so I put the sliced pumpkin leaves into the pot of rice.

After putting the pumpkin leaves I covered the pot and allowed it to simmer for about 3 -5minutes, then I turned off the gas. My MTN rice is fully ready.

I dished out the portion I wanted to eat into the plate and took a selfie of it first before I start eating it to my satisfaction.
