Eggplant Chutney
My recipe for today is Eggplant Chutney. I don't know how popular it is, but we all love to eat pickles. Who does not like to eat sweet and sour. Also I prefer this chutney recipe with Birani. It is one of my favorite foods. Hope many people are familiar with this type of chutney and we all know that the popularity of chutney is high.

I am sharing my recipe with you now. I will now present to you how I made it from start to finish.
The ingredients I used to make this eggplant chutney recipe are,

8 | Any type of pickle |
9 | Kusura jaggery |

Step 1,
First, cut the eggplant into small pieces. After cutting, wash the eggplant well.
Step 2,
Then put a pan on the stove and put mustard oil in that pan.
Step 3,
When the oil is hot, I will pour the eggplants. Then add turmeric powder and salt.
Step 4,
Then mix all together and lightly fry the brinjals for a while.
Step 5,
When the eggplants are fried, I will put them in a bowl.
Step 6,
Now heat the mustard oil in the pan and put garlic cloves and dry chillies in the oil.
Step 7,
Fry the garlic well for a while. Once fried, add a spoonful of garlic batter.
Step 8,
Then mix it well with some green chillies and turmeric powder.
Step 9,
If it is missed, I will pour the fried eggplants that I kept. Then I will move for a while.
Step 10,
Now, I will give the inside of the brinjals one by one, and chop coriander leaves as much as molasses. And sour pickles. I have used mango pickle here. Achar and ghagur should be given in such a way that the sweet and sour taste is similar to the quantity.
Step 11,
Then when all the ingredients are given, I will mix the chutney well. After stirring for a while, I will close the oven.
Step 12,
Now my eggplant chutney is ready, now I will serve the chutney in a bowl.
This recipe tastes delicious with hot Biryani. I hope you will also try it at home. It is really fun to eat.
