The Okra also known as Lady fingers is a regular feature in Nigerian dishes. The fruit pods of the okra plant are nutritious and rich in very important nutrients.

They contain appreciable levels of plant proteins and are quite rich in vitamins particularly vitamin C and K and they are a good source of antioxidants necessary for the maintenance of optimum health.

In Nigeria we eat okras mostly in our soups where they are added as thickeners. Certain Nigerian recipes require generous quantities of the finely chopped up or grated pods of the okra fruits. These are soups usually eaten with dumplings. One such popular soup in Nigeria where okras are generously used is the Okra Egusi soup (Okra Melon Seed Soup).
