When @apnigrich made draniki, I knew that I had seen that dish before. I was right. Draniki is the same as German potato pancakes.

So I made some draniki/potato pancakes. We eat them with applesauce. I made the applesauce 2 years ago and it has been resting on my shelf waiting for this opportunity. I additionally cooked some carrots. I know they look like beets, but those are purple carrots from my garden.

My recipe is the same as the draniki.

First I peeled and then grated 3 potatoes. I used a very fine grater and I admit this was pretty labour intensive. Maybe I am just lazy haha. My mother in law claims she blends the raw potatoes in her food processor. That would save time and effort, but I think that it will remove the grated texture of the potato and instead result in liquid potato.

After grating 3 good size potatoes, I squeezed the liquid out. There was a LOT of liquid, but I just squeezed and squeezed until the potato was as dry as I could get it. I used paper towel to assist in soaking up the excess liquid.

After I finished squeezing out the liquid, I added a bit of grated onion to the potato. This is optional and I did it just to enhance the savoury flavour.

Next, I added an egg and a little salt, and then mixed everything together into a dough.

With my hands, I formed flat pancakes with the potato dough. Then I placed them into a hot frying pan that held a little canola oil. I was pleased how easy it was to shape the dough and how well it stayed together.

It only took a few minutes to cook on medium heat. Once one side became a crispy golden colour, I flipped the pancake over to the other side.

That is all there is to it!

By the way: my purple carrots were quite delicious.

I dug up two of them and was impressed by the size. The only problem was they were so big and long that I broke off the ends.

I cut some up and boiled it in some water and a half teaspoon of honey. Although they are carrots, they bled like beets and turned the water a deep violet purple. I do not have a picture of that because the water boiled away, but it was quite impressive. They went quite well with the potato pancakes.

Carrots come in a wide variety of colours.

Stop! But in your photo I see that the tops of the root crop are not carrot, not green. Namely beetroot, purple.. Show the tops and then everything will fall into place.

LOL! I think it is funny that you think I am lying about vegetables. I will now trudge out to the garden to take a picture of the other purple carrots that are still growing. Lucky for me, I haven't pulled them all yet. :-P

They really do look like beets. They even bleed like beets, but they taste like carrot rather than beets. They also retain the texture of a carrot, rather than a beet, after cooking.

These purple carrots are a heritage variety. I like to be fancy with my vegetables.

I have been ok. I am still recovering from the kidney infection--I have been pretty tired. The doctor told me to expect to be 'under the weather' for a few weeks so I guess that is what is happening.

No. You have rubbed already boiled potatoes. And we rub raw potatoes on draniki! This is the peculiarity of these pancakes.

Or do you also have raw potatoes in the photo? But we grate on a very large grater. It turns out almost like noodles.

Red is beetroot, not carrot.

I grated RAW potatoes. I used a small grater, but they are shredded into thin little strips. They maintain the texture even after cooked.

The purple carrots are definitely carrots, not beetroot. I agree that these do look like beetroots though. Still, 100% carrot.
