Hot Potato... Cold Potato.

Pretty much everyone on my life says that I should have been Irish because of my unending love for potatoes! Like really, it is true love! There is no occasion, day, meal or situation when a potato is not welcome in my opinion. I will take them roasted, baked, fried, mashed - it does not matter! I will have one with breakfast, lunch and dinner all in one day! They are a meal all on their own!

In terms of carbs, potatoes are not my only love - but they are definitely my greatest! Pasta and bread coming in with a close second and third, though potato still wins because I will even make a mashed potato sandwich, lol - ever had one of those? Do it! It is amazing! That is of course of your mashed potato is amazing!

So, it is pretty needless to say that giving up potatoes was not an easy thing for me to do a few years back when I began eating very low carb. Don't get me wrong, I also really enjoy a sweet potato - I mean they are a lot better for you apparently, and I absolutely mastered a really tasty sweet potato mash during that time, as well as a cold sweet potato salad - but the fact is... it is still not a traditional potato and in my opinion there is nothing which can fully take its place.

About two months ago I decided to start intermittent fasting - which I have mentioned previously. I decided to do things this way rather than going the whole low carb route for the simple reason that I want to be able to enjoy the small luxuries in life - like a ham, cheese and lettuce sandwich... and yes, POTATOES.

Right, so I love potatoes - you get it. Why am I telling you all of this?! Well, I eat a potato with my dinner most nights since I have been fasting. I really enjoy a boiled potato actually - boiling hot, straight out the pot and then just finished with some salt and a little butter. Perfection.

So, what I do is I generally boil about four or five potatoes at the same time (do NOT tell me to cook them in the microwave - it is NOT the same!). I cook that many for two reasons - not to waste the gas on one potato and also because I chill them in the fridge for the following days of the week. Why do I do that? Well, Not only does it save me a little cooking prep time - but it is also benefitting me health wise - and weight wise.

Bring on the Cold Potatoes!


It is one change that makes the world of difference! Soooo, I recently learned that potatoes contain what is known as "resistant starch" which in basic terms means that when a potato is raw the starch in it cannot and won't be absorbed by the body - however, when it is cooked and then therefore HOT, the resistant starch changes and becomes what is known as "active".

This means that the body DOES absorb it - but before it does that, it transforms it into glucose... which is precisely what we DON'T want... especially in terms of weight gain. So basically, this lesson goes full circle. If you cook a potato and then let it cool - the active starch reverts back to resistant starch... and yes, you guessed it - the body does not absorb it! YAY!

So, that is the magic behind it all and the reason why I can now enjoy a potato with every single meal and feel completely guilt free! I suppose some of you are busy screwing up your noses at this point because like "who wants to eat a cold potato"... well, no need to get so dramatic, lol - Just take it out of the fridge a little earlier so it can get to room temperature and then when you serve it, do so with a little bit of warm, melted butter if you must. Personally, I actually quite enjoy a cold potato... especially with a whole lot of salt - which is apparently not as bad for us as we have been led to believe... but that is a story for a different day, lol.

I can totally relate to your potato craving! You've written about it so vividly that it's impossible not to get drawn into the world of potatoes. Your words reminded me of Van Gogh's iconic painting, The Potato Eaters. I love potatoes too, though I've been cutting back lately because of the high carb content. But after reading your take, I'm rethinking that decision—maybe potatoes aren’t so bad after all. A little bit of mashed potato with a squeeze of lemon, a pinch of salt, and some masala is truly a delight!

Love of potatoes? Oh, talk dirty to me!

I think potatoes are pretty much in my DNA... fried, mashed, baked, boiled, hot, cold, breakfast, lunch, dinner, snacks, sandwiches.

Heck, I made it through boarding school in the UK partially thanks to potato chip sandwiches!

I will even make a mashed potato sandwich, lol

But of course!

And leftover mashed potatoes, add an egg and a little minced garlic and fry as a "pancake" in really hot oil and you have a whole new meal.

In Denmark, most potatoes are boiled. The Danes have elevated potatoes to an artform... I think my parents grew six different strains of potatoes in our garden.

I'd be hard pressed to say that any particular type of potato is my favorite... but I am fond of new potatoes, boiled, with butter and a sprinkling of Maldon salt.
