I attempted a sourdough focaccia a little while ago, but it was a total fail because I was impatient and I did not allow the dough enough hours to ferment. Don't get me wrong, it was edible... but it was far from perfect, lol. So, I decided to give it another go because I really want to perfect it. A focaccia is a great social bread, so with Summer coming up it would be wonderful to be able to offer some home made sourdough deliciousness to my family and friends when the come over for a braai or whatever.
This time, instead of following a recipe which was completely different to the one I normally use to bake traditional sourdough bread - I decided to do exactly what I normally do. The way I thought about it was... the bread I make is perfect, the only real difference is the height - and then obviously the toppings etc.
So I treated the dough process in precisely the same way as I usually do. The same recipe, the same amount of stretch and folds and wait times in between. The only thing I did differently was at the point when I normally finish the dough shaping and place it into a round proofing basket, I stretched the dough out into an oven roasting tray.
The other thing I did wrong last time, was I "decorated" the top of the bread to be just before I baked it and (logically) a lot of what I put on the top, fell off haha - so, this time I added the tomatoes, olives and rosemary straight after stretching the dough out into the oven dish - that way I could squish them into the dough nicely.
The bread bakes for about 45 minutes, so I wanted the tomatoes to be a real roasted flavour punch for the bread. I had the most amazing roasted tomatoes at a restaurant many years ago and ever since then, I have prepared breakfast tomatoes that way... so I decided to do the same thing.
Slicing the baby tomatoes in half, then throwing them into a bowl and coating them in salt, pepper, rosemary, thyme, marjoram, a little sugar and a dollop of Mrs Balls Chutney. Then placing them on top of the bread to be.
Once I was done with all the toppings, I treated it exactly the same way I do the traditional bread - and covered it with a kitchen towel and popped it in the fridge over night. The next morning, it was time to see if what I had done would work! I grabbed the oven tray from the fridge and finished off the topping with a crack of black pepper, chopped garlic and a sprinkling of salt crystals. Popped that in the oven and then the waiting game began!
I am thrilled to report that it was 100% successful!!!! A delicious weekend bread and a game of rugby to accompany it - yay!

Whenever I go to the supermarket, it always catches my eye—sourdough!
I love bread, and I’ve been pretty successful making it at home, with about a 70-80% success rate, according to me! Lol.
I adore sourdough’s texture, crispiness, and how much healthier it is compared to other types. It instantly tops my list. But I’ve never had the courage to buy it—I always thought I’d make it at home someday. You’ve brought that secret wish to the surface.
