Pumpkins are in here right now and I often don’t eat them, I do eat a lot of raw food and for some reason never think to do much with pumpkins but this year I have fallen back in love with our staple winter veg. I’ve been busy making some pumpkin treats. Pumpkins are super nutrient dense, whilst being low calorie... so you can eat lots! It’s full of nutrients including beta carotene and alpha carotene.
So this week I have made pumpkin soup, made with veg stock, coconut cream, pumpkin, ginger, onion, garlic and chilli spice.
I also made these cookies by blending oats, cinnamon, pumpkin spice, pumpkin, peanut butter, nuts, maple syrup and a little baking soda and baking for 20 mins.
And to waste nothing I also made a super healthy snack by roasting the seeds with a little coconut oil and salt
