Raw vegan apple and cinnamon crepe with cashew cream

I made these delicious little crepes up for desert tonight. I didn't weigh or measure anything but I used pre made raw vegan coconut wraps.

I then processed a handful of dates in a blender with cinnamon a tiny bit of almond milk. Once blended into a kind of paste I added an apple chopped up and a tiny tiny bit of peanut butter. Once blended I put in a separate dish, whilst I made the cashew cream. I made this with cashew nuts, distilled water and fresh vanilla, blending it into a cream.

I then laid some of the apple mix on top of the crepe, then spread a little of the cream and rolled.

For the cacao topping I used a little melted coconut, a tiny bit of maple syrup and cacao powder stirred to Create a chocolate sauce.

This was delicious and super healthy. It would also make an amazing breakfast. I made quite a bit of everything so I can make more tomorrow. Sorry the photos are not great it's hard to take nice photos at night without shadows.
