Today I am sharing one of the delicious recipe of carrot kheer. I loved this kheer, as its special recipe of my mom. I tried to cook it, honestly its taste yummy. Therefore I thought on this occasion of new year celebrations I will share this with my steemian family. Its very easy but lil time taking, but the original taste of milk and carrot enhance its aroma more.
Lets start to cook, the following ingredients are needed.
Ingredients
Ingredients | Quantity |

Milk | 4 kg |
Rice | 200grams |
Carrots | 1kg |
Sugar | 200grams |
Cardamom | 7 to 8 |
Almond | 100gram |
Resins | 100 gram |
Khoya | 100 gram |
Rice boiling
I cleaned and washed the rice soaked in water. I put three time more water than rice in a pan. Boil thus water then add rice in it. After that I boiled rice fully. There is no need to remove remaining water of rice after boiling.
Milk Addition
As rice are completely boiled, In next step boiled the milk. In boiling milk added these rice, cooked it for 5 to 10 minutes. Don't stop starring spoon in the kheer until it cooked.
Carrot Mixing
As we add rice and water in the pan then cooked them for few minutes. As you see that they are cooked enough then add grated carrots which I grated before.
Then cooked it again until you feel that carrot are fully cooked. I also grated a coconut that it will enhance its taste and creamy texture.
I also added grated coconut and cardamon which are about 5 to 7. Cardamom are also used to enhance kheer taste and aroma. They taste so good that I can't explain it in words.
Sugar Addition
Then I add all the other dry fruits which my mother loved to add in the kheer like resins, almonds. They are consider to be an important ingredient for kheer.
I added Khoya in it. It is also called mava or curd. It is used to make kheer thick and tasty. I also added sugar because kheer is almost ready. Then I cooked it for 4 to 5 minutes to increase its thickness.
Garnishing
Now kheer is ready so, I grated some almonds and coconut for its garnishing. Its done garnish it with almonds and coconut.
