Preparation of Gaziantep Style Raw Meatballs
Recipe Fresh onions, garlic and parsley are washed and finely chopped into separate bowls and set aside. Dried onions and garlic are also finely chopped and set aside. In a bowl, I put meatballs, pepper paste, I put pistachio paste, ground pepper, black pepper, seven kinds of meatball spices and isot, salt. Bulgur for meatballs is added to these mixtures and kneaded for 25 or 30 minutes. After the bulgur is softened enough, olive oil, green onion, garlic and parsley are added and kneaded for a while. It is taken on a serving plate and you can serve with optional lettuce or greens.
