Here I am Iqra Muaaz with you guys to share my participation in Healthy Recipe Contest.
I am going to share my most demanding "Chicken Yakhni Pulao" / " Chicken Stock Pulao".
It is very healthy and delicious. I hope you all will like my recipe!
" CHICKEN YAKHNI (STOCK) PULAO"
- Ingredients for Yakhni
- 2 kg chicken
- 2 liter water
- 2 tbsp fennel seeds
- 2 tbsp cumin seeds
- 1 tbsp round black pepper
- 2 tbsp dried coriander
- 7-8 cloves
- 2 star anise
- 3 cinnamon sticks (1 inch)
- A pinch of Nutmeg and Mace
- 1 small onion
- 1 inch piece of ginger
- 1 full garlic
METHOD TO PREPARE YAKHNI (STOCK)
-Take a piece of cloth and put all ingredients (except chicken and water) on that cloth and make a "POTLI" (BUNDLE). As shown in picture
- Put chicken in a pan/pot add water and put the spices "potli" in middle.
- Let it boil till half an hour. And chicken yakhni/stock is ready.
- Seperate the Yakhni/Stock and Chicken.
Now for "PULAO" you will need:
Ingredients for PULAO:
- RICE 1 And half kg (soaked for half an hour then strained)
- Boiled chicken 2 kg
- YAKHNI / STOCK ( you prepared)
- 1 cup Oil
- 2 medium onions
- 1 tbsp ginger and garlic paste
- 1 medium tomatoes
- 7-8 green chillies
- Salt as required according to your taste
- 1 tbsp cumin seeds
- 1 tbsp ground black pepper
- 1 tbsp ground dried corriander
Method to prepare PULAO
STEP 1
- Put oil in a pan and fry onions till they get light golden brown.
- Add cumin seeds and stir fry.
STEP 2
- Add ginger and garlic paste, keep frying.
- Add tomatoes, green chillies, salt, dried corriander and ground black pepper and cook for 5 minutes
STEP 3
- Add chicken and fry for 7-10 minutes.
- Then add yakhni/stock in it.
- When yakhni/stock starts boiling add rice. And let the yakhni/stock dry!
STEP 4
- When yakhni dries completely steam the rice for 10-15 minutes
- After steam PULAO IS READY!
I always serve PULAO with "SHAMI KABAB'S" and "GREEN SALAD".
It is very much tasty and My family and guests love to eat PULAO with salad and kabab's. They both enhances the taste of PULAO.
