Today I am going to share the recipe for my favourite dish called “ chicken handi”. Chicken handi is similar to butter chicken minus the butter. Butter chicken is widely famous in Pakistan, India as well across the UK.
What I love about making chicken handi is that it takes only 20 minutes to cook. Keeping in mind that it's the main course dish, the time duration for this recipe is matchless and effortless.
You will find many recipes for butter chicken on the internet but this one is customized by me and quite easy. I would urge all of you to try it once and experience the aromatic blend of chicken along with Indian/Pakistani spices.
CHICKEN HANDI
Preparation time: 20 minutes
INGREDIENTS :
- 1 kg chicken
2 medium-sized onion (finely chopped)
2 medium-sized tomatoes( BLENDED)
2 green chillies
- Spice mix
MARINATION:
Make sure you wash your chicken well. Let off the excess water or tap dry it with a paper towel.
Now for the spices, I used a spice mix that comes in a pack but I will write down the spices that you will need in case you don't have access to these instant spice packs.
SPICES :
- Garam masala
- Red chilli paste
- Turmeric powder
- Coriander powder
- garlic powder
- salt
Mix these spices, add some vinegar or yogurt whatever you like and then add the chicken into the paste. Let it chill for 40 minutes.
COOKING :
heat a pan with some butter or oil. I used cooking oil.
Add onions and fry it until golden brown.
Now add the chicken into the pan and cook it for a good 15 minutes.
Now add the tomato paste and cook for another 5 minutes or until the paste leaves the oil.
TADAAA! chicken handi is ready
serve it with naan(flatbreads) or basmati rice.
