Hi, Şalgam (Turnip juice) is famous for the city of ADANA. I made it last month.

I am from Adana and I like it. İf you have a little cold, you should drink a glass of şalgam. ŞALGAM is a beverage that contains vitamins A, B and C and minerals such as calcium and iron. Turnip juice facilitates digestion. It is also recommended for removing toxins from the body and getting rid of cholesterol.

Materials:

• 6 or 7 medium turnip radishes or black carrots (red carrots)

• 1 beet (darkens the color of the turnip)

• 5 cloves of garlic

• 1 medium glass of bulgur

• 4 tablespoons of rock salt

• 1 teaspoon of granulated sugar

• 2 slices of medium-crust sourdough bread

• 1 piece of cheesecloth

• 5 liter glass jar

How is it prepared;

1. Carrots are cut in half, then transversely cut into four parts.

2. Beets peeled and chopped.

3. The cheesecloth is opened and spread on the table. Bulgur is poured into it. The bread is divided into several pieces and placed on the bulgur.

4. Cheesecloth is closed and turned into a ball. Its top is tied with a rope.

5. Put the cheesecloth turned into a ball at the bottom of the jar.

6. Add the chopped carrots and beets to the jar.

7. The lemon is peeled, sliced and put.

8. Rock salt is added.

9. Garlic is chopped large and added.

10.1 teaspoons of granulated sugar is added.

1. The jar is filled with water so that the water level remains above the carrots.

2. The mouth of the turnip juice is tightly closed and kept in a cool and sun-free environment for 15-20 days.
