Am excited and grateful to @steemwomenclub and @cryptokraze for organizing this beautiful contest.

Here’s is my entry
I am @nneoma08 proudly from The Igbo speaking tribe in the Eastern part of Nigeria, the giant of Africa.
Nigeria is known for her versatility in food choices because of our fertile lands and Agriculture. I think my country is top on the least of countries who have good food and taste with The Igbo tribe on the lead.🏃🏽‍♀️🏃🏽‍♀️
Amongst the Igbo traditional foods is the delicious and nutrition cocoyam.

Why I chose this traditional dish

Coco yams are excellent source of nutrients and numerous vitamins and minerals like protein, carbohydrates, Vitamins A. C.and E.
They are rich in riboflavin, thiamine, calcium, iron, potassium, zinc and dietary fibers.

Cocoyams help to protect the skin, aid digestion, increase blood circulation and prevent heart diseases.

The African oil bean seeds help to reduce cataracts of the eyes.
It is used to cure infertility, stomach ache and inflammation by The Yorubas in the Western part of Nigeria. (They burn the pods and mix it into oils and creams to cure inflammations and boils) They also use it in some ointments to treat insects bites and wounds.

The African oil bean is used to treat heart failure, cancer and some deadly infections like gonorrhea.

This dish is my absolute favorite because it’s directly from nature. It’s made with vegetables and greens. It’s all goodness and delicious. It’s easy to prepare and not costly at all.

My ingredients include;

  1. I cup of coco-yams
  2. African oil bean
  3. Fresh tomatoes
  4. Dried cat fish
  5. Crayfish
  6. Prawns
  7. Scent leaves
  8. Cayenne pepper
  9. 1 Maggi Boullion Cube
  10. Palm oil
  11. Onions
  12. Salt to taste

Cooking Procedures

  1. Peel the coco-yams, wash and place in the pot to cook for about 20 minutes.

  1. Add the oil bean, prawns, pepper, grated crayfish, salt, bouillon cube, stir and cook for more 5 minutes.

  1. Add the palm oil and and onions continue the cooking process for another 5 minutes.

  2. Wash the fish with salt and clean water and add to the pot

  1. Wash and slice the scent leaves and add to the pot and cook for 10 more minutes.

  2. Check to see if it’s cooked and switch off the heat source.

  3. Wash and chop the fresh tomatoes and set aside.

  4. Now serve the coco-yam and garnish with the remaining onions and chopped tomatoes.
