South Africans love their ginger beer or “gemmerbier” is known by many.

According to "Aunty Google"", Ginger Beer dates back as far as the 1700’s and was first made in Yorkshire, England. This maybe so but I can tell you now that it is the South African’s who perfected it!

Since I can remember my grandmother use to serve us “gemmerbier” on special occasions like Christmas, Easter and on birthdays.

Ginger beer is a non-alcoholic drink with a spicy ginger taste which is fermented with yeast, carbonated and then bottled for that special celebration or occasion. It is spicier than ginger ale and is not at all a beer as in a real beer therefor it is enjoyed by young and old.

You can buy ginger beer from supermarkets and cafe's. These type of ginger beer is known as “Stoney”. It might be referred to as a ginger beer but I can assure you that it doesn’t come close to homemade South African gemmerbier. You will for sure love it!

Herewith my own granny's quick and easy recipe for that perfect ginger beer;

INGREDIENTS:
  • 4, 5 litres water
  • 3 cups white sugar
  • 1 tablespoon tartaric acid
  • 3 teaspoons of fine ginger
  • 1 tablespoon dry yeast
  • 1 – 2 hands full of raisins (seedless)

METHOD:
  • Pour everything together into a container with a lid (bucket)
  • Stir until the sugar is dissolved
  • Cover the container and leave to stand for 12 hours. If the raisins float on top you know that it is ready
  • Strain the ginger beer and pour it into smaller bottles or into 2l soft drink plastic bottles
  • Put a few of the fermented raisins in the bottles (2 in smaller bottles and 5 in the bigger bottles
  • Of importance is that when you close the bottles you must not close the lids of the bottle to tight

It is a must to serve ginger beer when it is ice cold.

Enjoy!
