A beautiful day to my special mummies that make things happen in this group. Ever active women...I salute you and I know today went well. I'm glad to be here again. And today, I want to show you how I made my special local delicacy called "UKPO-OGEDE"-PLANTAIN MOI MOI.

Normally, I tie this locally...with local leafs but I made do with what I have at home- nylon.

INGREDIENTS

  • Overripe Plantain
  • Grinded corn
  • Pepper
  • salt
  • Onion
  • Red oil
  • Crayfish (optional)
  • Native leaf or Nylon (to tie)
  • Center leaf or garden egg leaf(optional)

PREPARATION
1 ) Remove the peel off the plantain, wash and pound/grind/blend till it's ok by you. Set aside.
2 ) Melt the corn with water though it should be thick and set aside.
3 ) Blend pepper and crayfish together..(Did mine roughly)
4 ) Set a small pot on fire,add red oil
5 ) dice the onion and fry in hot red oil.
6 ) Add the pepper and crayfish to the onion, add salt then fry for 3minutes.

7 ) put the blended plantain into a bowl, add the corn and mix well.
8 ) Put all fries into the mixture and stir well for everything to mix well. Add water but be careful so it won't be water.
9 ) Check wether it's tasty, if not, add little salt.
You know overripe Plantain can be veeerrry sweet so, be careful so it won't be too salty... please no seasoning cube o!
10 ) Once it's ok, you can decide to add cent leaf/ garden egg leaf.
11 ) scoop portions into the local leaf or your nylon... depending on the one you are using. As you scoop, you tie...then put inside a pot ( your pot is dependent on the quantity you are cooking). Then, set on fire to cook well.
Allow to cook for about 30-40minutes. You know corn can be hard so enough time will help it get done very well. The outcome is the 1st picture above.

This is a meal. Apart from corn you can cook it with wheat. Though it may come out a little darker than using corn but it's still ok.
Note: the corn should be proportional or a little above the plantain. That way,it will hold it well and the sweetness of the plantain won't override the meal.
