Hope you all are having a great day and looking forward to the upcoming weekend. Today, I would like to share the recipe of a dish we usually make at home. Of course, this is not the authentic Spanish Rice recipe but just one variation we make in Pakistan (with our own twist). Let's get into it without further ado!
Note: This is a two parts dish - gravy and rice, so I have broken down this post into two as well.
Ingredients for gravy:
- 1 pound boneless chicken breast
- 1 capsicum
- 1 medium-sized onion
- 1 cup ketchup
- 2 tbsp chilli garlic sauce
- 2 tsp vinegar
- 1 tsp sugar
- 1 cup chicken stock
- 1/2 tsp red chilli powder
- Salt (as per taste)
- Oil
Ingredients for rice:
- 1 cup spring onion (green part only)
- 1 cup rice
- Oil
- Salt
Method for gravy:
Step 1: Put oil in a wok.
Step 2: Put chicken in the same wok and saute until the water gets dry and it starts turning goldenish.
Step 3: Now, add capsicum and onion and mix well.
Step 4: After sauted, it's time to add seasoning. First, add ketchup and mix well.
Step 5: Now, add vinegar and chilli garlic sauce and mix well.
Step 6: Finally, add sugar, salt, red chilli powder and chicken stock, and mix.
Step 7: Close the lid and leave the wok for 2 mins on medium-low flame or till your desired consistency is achieved.
Method for rice:
Step 1: Soak and boil rice with salt.
Step 2: When cooked, drain its water and add spring onion and oil. Leave to steam for 2 mins on low flame.
Step 3: Once ready, serve the gravy and rice together with french fries.
