PREPARING MY SPECIAL TRADITIONAL MEAL.

Hello family, greetings to you all. It's been quite a while with silence from my side but I back again. Today I want to share with you this special meal. This is authentically my traditional meal. If you hear of any meta event and you don't see this dish then it's cancelled. It is called "Ngom tare" which is prepared for all cultural and traditional feast like marriages, born houses, dead celebration, yam festival or any traditional feast in my area.

Normally or traditionally, you prepare it with beef (cow meat), pork, chicken for a significant event but it can be prepared with any kind of meat. Let's see how it's done using chicken.

INGREDIENTS

• Fowl
• A bunch of plantain
• Bitter leaf
• Palm oil
• Maggi and salt
• Pepper

PROCEDURE

• Firstly, put some water in a pot and place the fire to almost boiling point.
• Kill the fowl, put in the hot water for about two minutes and remove. Gradually remove the feathers and scales from the leg.

• Dissect it removing everything from the stomach making sure the bile doesn't get burst. Sort out the liver and the gizzard, clean and keep aside.
• Place the whole chicken on the fire to roast for a while. This is to enhance the taste of the food.

• After roasting insert the trotters (legs of the fowl, gizzard and liver inside the fowl and keep.

THE PLANTAIN

• Peel all the plantain and put in a basin. Do not scrape the the plantain after peeling.

• Wash plantain and start filling in a sizeable pot. When it is almost half the pot, place the whole chicken at the center of the pot then completely fill with plantain.

• Get the bitter leaf, put in a clean pot and boil for about 5 minutes. Remove, wash and keep aside.

• Add in water to the pot of plantain and place on the fire and cook for about 20 minutes.
• Add in the bitter leaf, oil, leaf, salt and maggi and cook for another 15 minutes.
• Finally add oil, pepper more maggi and salt and cook for about 30 minutes or more till the plantain is really soft.

Having everything in the pot

Hurray!!! Food is ready, remove and serve. You can serve with any dish as you wish. But in my place we use wooden dishes or plantain leaves and our hands ( no forks, spoons etc) to eat the this special meal. Trust me it has a different and special taste eating it in a leaf or dish. Before the coming of the white man we used these to eat and still use it thereby preserving our tradition. It's a simple dish to prepare you can try it any time.
