Africans are blessed with different delicious meals that can sweep one off his or her feet after eating.
Now let me tell you about one of our most delicious indigenous meal.
The Banga soup ( Ofe Akwu )
Here I have Banga soup and starch
This is the most popular native food from the south side my country Nigeria, popularly found in of ijaw.
You would like to eat with me also right? Now let me tell you the ingredients to cook with and the directives
Now for the Ingredients you'd need palm fruits (Banga), catfish, Beef, Banga leave (tarigo or bitter leave), seasoning ( Maggi), stockfish (optional), onions, pepper, Crayfish, cow skin (optional), Starch.
Directives: {I'm really sorry I forgot to take pictures whilst cooking}
Boil your palm fruit for at least 10 to 15mins, pour out your water, put your boiled palm fruit into your mortar and pound very well, As you are pounding the palm fruit, steam your fish, beef,cow skin, stock fish with your desired seasoning (let it bowl to almost half done) then put your pounded palm fruit in a bowl and add two cups of water (not in the same bowl though).
Next, smatch with your hand, sieve the water and put in a pot then put the pot containing the sieved water on fire allow to boil for 10 mins, next you add your stock and allow to boil for 15mins more, next you add your seasonings ( by now you should be getting the aroma and drooling lol) add your Crayfish and pepper and allow to boil for at least 10mins now...now...now your soup is ready!!!
Let's get to making the starch here, I know you must have been picking the soup already hahahaha
Now to get your Starch ready, cut your starch inside a bowl and add water according to your quantity, mulch it, mix it so that there will be no seed, pour it into your pot, put it on fire and add red oil to it and stir till it gets hard then bake it while still on fire until it becomes yellow in colour like a custard, after that you know what's next right?
Bring it down, serve in a flat plate and your Banga soup in a round plate, then food is ready, make sure you eat it while it's very hot and trust me you'd love it.
