Greetings to all the beautiful people in the #latina and @cotina community, Thursday is my favorite day because I can post about one of the things that I am passionate about, which is cooking and creating original dishes. I love vegetables, I feel that they are such a healthy and easy to digest food that I feel in glory when I eat them, they are also so versatile that they can be prepared in countless ways, you just have to be creative and nothing more. Well, here I present my VEGETABLE CASEROLA , with a tutorial and everything so that you can prepare it whenever you want, it's very simple.
The first thing you should do is heat the oil over medium heat in a pan or saucepan. First of all, wash all the vegetables very well before starting.
Next, you must add the onion first, followed by the chili pepper and finally the chopped chives. Mix and cook until the onion crystallizes. It is important NOT to add the garlic at this time. I'll tell you when ...
Ahora debes comenzar a agregar todas las especias una a una, y mezclar.
Now you must start adding all the spices one by one, and mix.
En el caso de que se seque un poco el aliño, puedes agregarle 1/2 vaso de agua y mezclar.
In the event that the dressing dries a bit, you can add 1/2 glass of water and mix.
After allowing the water to mix with the dressing for a few seconds, start by adding the carrots, mixing with the dressing and letting it cook for about a minute. Then add the chopped potatoes and mix. Cover and cook for approximately 2 or 3 minutes, or when the vegetables are punctured, they are somewhat soft.
Agregar en este momento el ajo y mezclar. Seguir cocinando un minuto mas para que los vegetales se mezclen con el ajo.

Por ultimo agrega el cilantro picado, mezcla y déjalo tapado hasta el momento de servir. Yo lo acompañe con arroz y tajadas fritas y me agradó mucho.
Nota Importante: Antes de usar el cilantro debes lavarlo muy bién y luego dejarlo remojando en un poco de agua con vinagre o limón de 3 a 5 minutos, luego lo podrás usar con toda confianza.
Finally add the chopped cilantro, mix and leave covered until serving time. I accompanied it with rice and fried banana slices and I really liked it.
Important Note: Before using the coriander you should wash it very well and then let it soak in a little water with vinegar or lemon for 3 to 5 minutes, then you can use it with complete confidence.
